- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 2 tbsp olive oil
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- In a large bowl, combine black beans, corn, cherry tomatoes, avocado, and red onion.
- Add cilantro, lime juice, olive oil, and cumin. Toss gently.
- Season with salt and pepper.
- Serve immediately or chill for 30 minutes before serving.

- For extra protein, add grilled chicken or shrimp.
- Use fresh corn if in season.
