A rich and flavorful pasta dish with tender chicken and a creamy Cajun-spiced sauce.


Ingredients

  • 8 oz penne pasta
  • 2 boneless, skinless chicken fillets
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Season chicken fillets with Cajun seasoning.
  3. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-6 minutes per side until done. Remove and slice.
  4. In the same skillet, sauté bell peppers, onion, and garlic until soft.
  5. Add heavy cream, chicken broth, and Parmesan cheese. Stir until the sauce thickens.
  6. Return sliced chicken to the skillet and toss with cooked pasta.
  7. Season with salt and pepper. Serve hot.

Notes

  • Adjust Cajun seasoning to taste for more or less spice.
  • Use half-and-half instead of heavy cream for a lighter version.
  • Store leftovers in an airtight container for up to 3 days.
