Ingredients

  • Penne Pasta: 12 oz (340 g)
  • Salmon Fillets: 2 skinless fillets (about 6 oz each)
  • Heavy Cream: 1 cup (240 ml)
  • Cajun Seasoning: 2 tablespoons
  • Fresh Spinach: 4 cups packed
  • Garlic: 3 cloves minced
  • Parmesan Cheese: 1/2 cup grated
  • Olive Oil: 2 tablespoons
  • Salt and Pepper: to taste

Instructions

  1. Cook the penne pasta in salted boiling water until al dente, then drain and reserve some pasta water.
  2. Season the salmon fillets with Cajun seasoning, salt, and pepper.
  3. Heat olive oil in a skillet and cook the salmon for 4-5 minutes on each side until flaky.
  4. Sauté minced garlic in the same skillet, then add fresh spinach and cook until wilted.
  5. Pour in heavy cream and reserved pasta water, then mix in Cajun seasoning and Parmesan cheese to create the sauce.
  6. Add the cooked penne pasta to the skillet and toss to coat with the sauce.
  7. Flake the cooked salmon and gently fold it into the pasta mixture.
  8. Serve the dish with extra Parmesan cheese and optional garnishes.
