  • 2 cups shredded rotisserie chicken meat
  • 1 (16 ounce) package small gnocchi
  • 2 cups torn fresh spinach
  • ½ teaspoon ground thyme
  • ¼ teaspoon freshly grated nutmeg
  • Salt and ground black pepper to taste

Instructions

  1. Begin by melting the butter and olive oil in a large pot or Dutch oven over medium heat. Add the diced zucchini, celery, onion, red bell pepper, and shredded carrots. Sauté for about 5-7 minutes.
  2. Stir in the minced garlic and cook for an additional minute. Sprinkle the flour over the sautéed vegetables and stir well, cooking for another 2 minutes.
  3. Pour in the chicken broth gradually, whisking to avoid lumps. Bring the mixture to a gentle simmer.
  4. Add the half-and-half and fat-free half-and-half, stirring gently to heat through.
  5. Stir in the shredded rotisserie chicken, small gnocchi, torn spinach, ground thyme, grated nutmeg, salt, and pepper. Simmer for about 5-7 minutes until the gnocchi float to the top.
  6. Taste the soup and adjust the seasoning as needed.
