- 2 boneless, skinless chicken fillets
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons butter
- 8 oz mushrooms, sliced
- 1/2 cup Marsala wine
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 teaspoon fresh thyme
Instructions
- Pound chicken fillets to an even thickness and season with salt and pepper.
- Dredge chicken in flour, shaking off excess.
- Heat olive oil and butter in a pan over medium-high heat.
- Cook chicken for 5-6 minutes per side until golden. Remove from pan.
- Add mushrooms to the pan and sauté until tender.
- Pour in Marsala wine and chicken broth, scraping browned bits from the pan.
- Simmer for 3-4 minutes until slightly reduced.
- Stir in heavy cream, Parmesan, and thyme.
- Return chicken to the pan and simmer for 2-3 minutes until heated through.
- Serve warm.

- Use dry Marsala wine for best flavor.
- Substitute half-and-half for heavy cream if needed.
- Serve with pasta or mashed potatoes.
