Ingredients
- Pasta: 300 grams (about 10.5 oz)
- Chicken Breast: 2 pieces, approximately 500 grams (1 lb)
- Pesto Sauce: 1 cup
- Heavy Cream: 1 cup (240 ml)
- Garlic: 3 cloves, minced
- Parmesan Cheese: 1/2 cup, grated
- Cherry Tomatoes: 1 cup, halved
- Spinach: 2 cups, fresh
- Salt and Pepper: to taste
- Olive Oil: 2 tablespoons
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Reserve 1 cup of pasta water before draining.
- Season the chicken breasts with salt and pepper. Heat olive oil in a skillet and cook the chicken for 6-7 minutes on each side until golden brown and cooked through. Let rest and slice.
- Sauté minced garlic in the same skillet for 1 minute until fragrant.
- Pour in heavy cream, simmer for 2-3 minutes, then add pesto and Parmesan cheese, stirring until creamy.
- Add the cooked pasta to the skillet and toss to coat. Adjust sauce consistency with reserved pasta water if needed.
- Stir in cherry tomatoes and spinach, cooking for an additional 2-3 minutes until spinach wilts.
- Serve the dish garnished with extra Parmesan cheese and enjoy!
