Ingredients
- Pork Chops: 4, about one inch thick
- Garlic: 4 cloves, minced
- Mushrooms: 8 ounces, sliced (cremini or button)
- Heavy Cream: 1 cup
- Chicken Broth: 1 cup
- Fresh Thyme: 1 tablespoon, chopped (or 1 teaspoon dried thyme)
- Salt and Pepper: to taste
- Olive Oil: 2 tablespoons
- Butter: 2 tablespoons
Instructions
- Pat the pork chops dry and season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat and sear the pork chops for 4-5 minutes on each side until golden brown.
- Remove the pork chops and set aside. In the same skillet, melt butter and sauté the mushrooms for 5-7 minutes, then add minced garlic.
- Pour in chicken broth, deglazing the skillet, and let it simmer for 3-4 minutes.
- Stir in heavy cream and thyme, season to taste, and return the pork chops to the skillet, spooning the sauce over them.
- Simmer for an additional 5 minutes until the sauce thickens slightly.
- Plate the pork chops and drizzle with the creamy sauce before serving.
