  • Chicken Broth: 1 cup
  • Fresh Thyme: 1 tablespoon, chopped (or 1 teaspoon dried thyme)
  • Salt and Pepper: to taste
  • Olive Oil: 2 tablespoons
  • Butter: 2 tablespoons

Instructions

  1. Pat the pork chops dry and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat and sear the pork chops for 4-5 minutes on each side until golden brown.
  3. Remove the pork chops and set aside. In the same skillet, melt butter and sauté the mushrooms for 5-7 minutes, then add minced garlic.
  4. Pour in chicken broth, deglazing the skillet, and let it simmer for 3-4 minutes.
  5. Stir in heavy cream and thyme, season to taste, and return the pork chops to the skillet, spooning the sauce over them.
  6. Simmer for an additional 5 minutes until the sauce thickens slightly.
  7. Plate the pork chops and drizzle with the creamy sauce before serving.
