Ingredients

Instructions
- Prepare the ingredients by shredding the cooked chicken, dicing the onion, mincing the garlic, and slicing the mushrooms.
- If using raw chicken, cook it in boiling water or sautΓ© it in olive oil until fully cooked, then shred.
- In a large pot, heat olive oil over medium heat and sautΓ© the onion until translucent, about 5 minutes.
- Add minced garlic and sliced mushrooms, cooking until mushrooms are tender, about 5-7 minutes.
- Stir in uncooked wild rice, then add chicken broth and thyme. Bring to a boil, then reduce heat and simmer for about 45 minutes.
- Once the wild rice is tender, reduce heat and stir in heavy cream, mixing gently.
- Add shredded chicken and heat through for about 5 minutes. Adjust seasoning with salt and pepper.
- Ladle soup into bowls and garnish with chopped parsley before serving.
