Description

A delicious and comforting dish featuring tender chicken in a creamy mushroom sauce served with crispy herb-roasted potatoes.


Ingredients

  • 4 boneless, skinless chicken fillets
  • 2 cups sliced mushrooms
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 4 medium potatoes, cubed
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with olive oil, thyme, rosemary, salt, and pepper. Roast for 30-35 minutes until golden and crispy.
  3. Heat butter and oil in a pan over medium heat. Cook chicken for 6-7 minutes per side until golden. Set aside.
  4. In the same pan, sauté mushrooms and garlic until softened.
  5. Pour in heavy cream, stir well, and simmer for 5 minutes until slightly thickened.
  6. Return chicken to the pan, coat with sauce, and heat through.
  7. Serve with herb-roasted potatoes.
