Ingredients

  • 🍝 Pasta: 300 grams of fettuccine or penne
  • 🍗 Chicken Breast: 2 pieces (about 500 grams), diced
  • 🥛 Heavy Cream: 1 cup (240 ml)
  • 🧄 Garlic: 4 cloves, minced
  • 🌶️ Red Pepper Flakes: 1 teaspoon (adjust to taste)
  • 🧀 Parmesan Cheese: 1 cup, grated
  • 🛢️ Olive Oil: 2 tablespoons
  • 🧂 Salt and Pepper: to taste
  • 🌿 Fresh Parsley (optional): for garnish

Instructions

  1. Start by boiling water in a large pot. Add a generous amount of salt to the water. Once boiling, add 300 grams of pasta and cook until al dente, about 8-10 minutes. Drain the pasta, saving 1 cup of pasta water.
  2. While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced chicken, season with salt and pepper, and cook for 5-7 minutes until browned and cooked through. Remove and set aside.
  3. In the same skillet, add minced garlic and 1 teaspoon of red pepper flakes. Sauté for about 1 minute until fragrant.
  4. Pour in 1 cup of heavy cream and stir well. Bring to a gentle simmer and cook for 2-3 minutes, stirring occasionally.
  5. Add the cooked pasta and sautéed chicken back into the skillet. Toss gently to coat the pasta in the sauce, adding reserved pasta water as needed for consistency.
  6. Stir in 1 cup of grated parmesan cheese until melted and fully incorporated. Adjust seasoning with salt, pepper, or red pepper flakes if needed.
  7. Serve warm, garnished with additional parmesan cheese and fresh parsley if desired.
