Ingredients
- 🍝 Pasta: 300 grams of fettuccine or penne
- 🍗 Chicken Breast: 2 pieces (about 500 grams), diced
- 🥛 Heavy Cream: 1 cup (240 ml)
- 🧄 Garlic: 4 cloves, minced
- 🌶️ Red Pepper Flakes: 1 teaspoon (adjust to taste)
- 🧀 Parmesan Cheese: 1 cup, grated
- 🛢️ Olive Oil: 2 tablespoons
- 🧂 Salt and Pepper: to taste
- 🌿 Fresh Parsley (optional): for garnish
Instructions
- Start by boiling water in a large pot. Add a generous amount of salt to the water. Once boiling, add 300 grams of pasta and cook until al dente, about 8-10 minutes. Drain the pasta, saving 1 cup of pasta water.
- While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced chicken, season with salt and pepper, and cook for 5-7 minutes until browned and cooked through. Remove and set aside.
- In the same skillet, add minced garlic and 1 teaspoon of red pepper flakes. Sauté for about 1 minute until fragrant.
- Pour in 1 cup of heavy cream and stir well. Bring to a gentle simmer and cook for 2-3 minutes, stirring occasionally.
- Add the cooked pasta and sautéed chicken back into the skillet. Toss gently to coat the pasta in the sauce, adding reserved pasta water as needed for consistency.
- Stir in 1 cup of grated parmesan cheese until melted and fully incorporated. Adjust seasoning with salt, pepper, or red pepper flakes if needed.
- Serve warm, garnished with additional parmesan cheese and fresh parsley if desired.
