Description

A comforting and creamy spinach mushroom lasagna that combines layers of tender noodles, ricotta cheese, and earthy mushrooms, perfect for family gatherings or cozy dinners.


Ingredients

  • Lasagna noodles: 12 sheets (uncooked)
  • Fresh spinach: 4 cups (washed and chopped)
  • Mushrooms: 2 cups (sliced, preferably cremini or button)
  • Ricotta cheese: 1 cup
  • Mozzarella cheese: 2 cups (shredded)
  • Parmesan cheese: 1 cup (grated)
  • Garlic: 3 cloves (minced)
  • Heavy cream: 1 cup
  • Olive oil: 2 tablespoons
  • Salt: to taste
  • Pepper: to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat and sauté sliced mushrooms until golden brown (5-7 minutes).
  2. Add minced garlic and sauté for another 1-2 minutes until fragrant. Season with salt and pepper.
  3. Add chopped spinach to the skillet and cook until wilted (3-4 minutes). Mix with the sautéed mushrooms and set aside.
  4. In a mixing bowl, combine ricotta cheese, heavy cream, and half of the grated Parmesan cheese. Mix until smooth and season with salt and pepper.
  5. In a 9×13 inch baking dish, spread a thin layer of the ricotta mixture on the bottom, followed by a layer of lasagna noodles.
  6. Add half of the spinach and mushroom mixture, followed by a layer of mozzarella cheese.
  7. Repeat the layers: ricotta mixture, noodles, remaining spinach and mushrooms, and more mozzarella cheese.
  8. Finish with a final layer of noodles, the remaining ricotta mixture, and top with the rest of the mozzarella and Parmesan cheese.
  9. Cover with aluminum foil and bake in a preheated oven at 375°F (190°C) for 25 minutes.
  10. Remove the foil and bake for an additional 15-20 minutes until the cheese is golden brown. Let it rest for 10-15 minutes before serving.

Notes

  • Feel free to customize the recipe by adding spices or different cheeses.
  • Leftovers can be stored in the refrigerator for up to 3-4 days or frozen for 2-3 months.
  • For a gluten-free version, use gluten-free lasagna noodles.
