Ingredients

- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add garlic and sauté until fragrant, about 30 seconds.
- Add shrimp and cook until pink, about 2-3 minutes per side. Remove and set aside.
- In the same skillet, add cherry tomatoes and sun-dried tomatoes. Cook for 2 minutes.
- Stir in spinach and cook until wilted.
- Pour in heavy cream and bring to a simmer.
- Add Parmesan cheese and Italian seasoning. Stir until the sauce thickens.
- Return the shrimp to the skillet and toss to coat in the sauce.
- Season with salt and pepper to taste.
- Garnish with fresh basil before serving.

- Use fresh shrimp for the best flavor.
- Adjust creaminess by adding more or less heavy cream.
- Serve over pasta, rice, or with crusty bread.
