Description

Crispy baked chicken taquitos filled with seasoned shredded chicken and cheese.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 12 small corn tortillas
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Mix chicken, cheese, cumin, chili powder, garlic powder, and salt in a bowl.
  3. Warm tortillas for 30 seconds in the microwave to make them pliable.
  4. Place 2 tbsp of filling on each tortilla and roll tightly.
  5. Place taquitos seam-side down on a baking sheet.
  6. Brush with olive oil.
  7. Bake for 15-20 minutes until crispy.

Notes

  • Use leftover rotisserie chicken for easy prep.
  • For extra crispiness, spray taquitos with cooking spray before baking.
  • Serve with salsa, guacamole, or sour cream.
