Description

Ingredients

  • 1 cup dried chickpeas
  • 1/2 onion, chopped
  • 2 cloves garlic
  • 1/4 cup fresh parsley
  • 1/4 cup fresh cilantro
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp baking soda
  • 2 tbsp flour
  • Oil for frying

Instructions

  1. Soak chickpeas overnight, then drain.
  2. Blend chickpeas, onion, garlic, parsley, cilantro, cumin, salt, and pepper into a coarse paste.
  3. Mix in baking soda and flour.
  4. Shape into small balls.
  5. Heat oil in a pan and fry until golden brown.
  6. Drain on paper towels and serve.

Notes

  • Do not use canned chickpeas—they are too soft.
  • For extra crispiness, refrigerate the mixture for 30 minutes before frying.
  • Serve with tahini sauce or in pita bread.
