Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup low sodium soy sauce (or coconut aminos)
  • 2 cloves garlic, minced
  • 2 tablespoons brown sugar
  • 2 tablespoons tahini
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon sesame seeds
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup toasted sliced almonds
  • 1/4 cup roasted cashew halves

Instructions

  1. Marinate the chicken in a mixture of soy sauce, garlic, brown sugar, tahini, sesame oil, rice vinegar, ginger, sesame seeds, and red pepper flakes for at least 30 minutes.
  2. Grill the marinated chicken for 5-6 minutes on each side until cooked through, then let it cool and slice it into strips.
  3. Shred the green and red cabbage, chop the carrots, green onions, cilantro, red bell pepper, and jalapeño.
  4. In a small bowl, whisk together sesame oil, rice vinegar, soy sauce, honey, ginger, garlic, and sesame seeds to make the dressing.
  5. In a large mixing bowl, combine the shredded vegetables and toss with the dressing.
  6. Top the salad with sliced grilled chicken, toasted almonds, and cashew halves before serving.
