- 2 cups red cabbage, shredded
- 1 cup carrots, shredded

- 2 boneless, skinless chicken breasts
- 1/4 cup low sodium soy sauce (or coconut aminos)
- 2 cloves garlic, minced
- 2 tablespoons brown sugar
- 2 tablespoons tahini
- 2 tablespoons sesame oil
- 2 tablespoons rice vinegar
- 1 tablespoon fresh ginger, grated
- 1 tablespoon sesame seeds
- 1/4 teaspoon red pepper flakes
- 1/4 cup toasted sliced almonds
- 1/4 cup roasted cashew halves
Instructions
- Marinate the chicken in a mixture of soy sauce, garlic, brown sugar, tahini, sesame oil, rice vinegar, ginger, sesame seeds, and red pepper flakes for at least 30 minutes.
- Grill the marinated chicken for 5-6 minutes on each side until cooked through, then let it cool and slice it into strips.
- Shred the green and red cabbage, chop the carrots, green onions, cilantro, red bell pepper, and jalapeño.
- In a small bowl, whisk together sesame oil, rice vinegar, soy sauce, honey, ginger, garlic, and sesame seeds to make the dressing.
- In a large mixing bowl, combine the shredded vegetables and toss with the dressing.
- Top the salad with sliced grilled chicken, toasted almonds, and cashew halves before serving.
