Ingredients

- 4 medium potatoes
- 1/4 cup mayonnaise
- 1 tbsp mustard
- 1 tsp vinegar
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Boil potatoes until tender, then let cool.
- Cut potatoes in half and scoop out the centers.
- Mash the scooped-out potato with mayonnaise, mustard, vinegar, paprika, salt, and pepper.
- Fill the potato halves with the mashed mixture.
- Garnish with fresh parsley and serve.

- Use russet or Yukon gold potatoes for best results.
- Adjust seasoning to your taste.
