Ingredients

- 🌰 Crushed pistachios – 50g (about 1/2 cup, for coating)
- 🍫 Cocoa powder – 30g (about 1/4 cup, for dusting)
Instructions
- Prepare the pistachio filling by blending roasted pistachios into a smooth paste.
- Chop the dark chocolate into small pieces and place it in a heatproof bowl.
- Heat the heavy cream in a small saucepan until it just begins to simmer, then pour it over the chopped chocolate and let it sit for a couple of minutes.
- Stir the mixture until smooth and shiny, then cover and refrigerate for 1-2 hours.
- Once set, take portions of the ganache, flatten them, add a small amount of pistachio filling, and roll into balls.
- Coat each ball in crushed pistachios and dust with cocoa powder, then refrigerate for another 30 minutes to set.
