Ingredients

  • All-purpose flour: 2 ¾ cups (340 g)
  • Granulated sugar: 1 cup (200 g)
  • Unsalted butter: 1 cup (226 g), softened
  • Large eggs: 2
  • Vanilla extract: 2 teaspoons
  • Baking powder: 1 teaspoon
  • Salt: ½ teaspoon
  • Powdered sugar: 2 cups (240 g)
  • Food coloring: Assorted colors
  • Sprinkles: As desired

Instructions

  1. Cream together the softened butter and granulated sugar until light and fluffy.
  2. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry mixture to the wet mixture, mixing until just combined.
  5. Divide the dough into two portions, flatten into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
  6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll out one disk of dough to about ¼ inch thick and cut out shapes with cookie cutters.
  8. Place cutouts on the prepared baking sheets, spaced about 2 inches apart.
  9. Bake for 8-10 minutes until edges are lightly golden, then cool on baking sheets for a few minutes before transferring to a wire rack.
  10. Prepare icing by mixing powdered sugar with water or milk until smooth, then color with food coloring.
  11. Once cookies are cool, decorate with icing and sprinkles.
  12. Let the decorated cookies sit until the icing hardens.
  13. Serve the cookies on a festive platter for your Easter celebrations.
