- 1 box yellow cake mix
- 1 cup fresh or frozen blueberries
- 1 cup water
- 1/3 cup vegetable oil
- 3 eggs
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a large bowl, mix cake mix, water, oil, eggs, and vanilla until smooth.
- Gently fold in blueberries.
- Fill muffin cups 2/3 full with batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool for 5 minutes before serving.
Notes
- Use frozen blueberries without thawing to prevent color bleeding.
- For extra flavor, add 1 tsp lemon zest to the batter.
- Store leftovers in an airtight container for up to 3 days.
