Ingredients

- 2 large eggs
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 cup cooked black beans
- 1/4 cup shredded cheese
- 1 large flour tortilla
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add diced bell peppers and onions. Cook until soft.
- Whisk eggs in a bowl, then pour into the pan. Scramble until fully cooked.
- Add black beans and shredded cheese. Stir until cheese melts.
- Warm the tortilla in a separate pan or microwave.
- Spoon the egg mixture onto the tortilla. Roll into a burrito.
- Serve hot.
