Description
A comforting casserole combining tender chicken, vibrant broccoli, and a creamy sauce, topped with crispy breadcrumbs.
Ingredients
- Cooked chicken: 2 cups, shredded or diced
- Broccoli: 2 cups, steamed and chopped
- Cream of chicken soup: 1 can (10.5 oz)
- Mayonnaise: 1/2 cup
- Cheddar cheese: 1 cup, shredded
- Breadcrumbs: 1 cup (preferably seasoned)
- Salt and pepper: to taste
- Olive oil or cooking spray: for greasing the baking dish
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the chicken by shredding or dicing it into bite-sized pieces.
- Steam the broccoli until bright green and tender, then chop it into smaller pieces.
- In a large mixing bowl, combine the cream of chicken soup, mayonnaise, and half of the shredded cheddar cheese. Season with salt and pepper.
- Fold the cooked chicken and steamed broccoli into the sauce mixture until evenly coated.
- Pour the mixture into a greased 9×13 inch baking dish, sprinkle with remaining cheddar cheese and breadcrumbs, and bake for 25-30 minutes.
Notes
- Using leftover rotisserie chicken can save time.
- Fresh broccoli adds color and nutrition, but frozen can be used as well.
- Feel free to substitute ingredients based on availability and preference.
