- 2 boneless, skinless chicken fillets
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 cup carrots, chopped
- 1 cup chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken and cook until browned, about 5 minutes per side. Remove and set aside.
- In the same pot, sauté onion, garlic, bell pepper, and carrots for 3-4 minutes.
- Pour in chicken broth and stir in thyme, paprika, salt, and pepper.
- Return chicken to the pot, cover, and simmer for 20 minutes or until chicken is fully cooked.
- Serve hot with rice or bread.
