- 2 boneless, skinless chicken fillets
- 4 medium potatoes, cubed
- 2 cups green beans, trimmed
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp dried rosemary
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with 1 tbsp olive oil, salt, pepper, and garlic powder.
- Spread potatoes on a baking sheet and roast for 20 minutes.
- Season chicken with salt, pepper, and rosemary.
- Heat remaining olive oil in a pan and cook chicken for 6-7 minutes per side.
- Add green beans to the potatoes and roast for another 10 minutes.
- Slice chicken and serve with potatoes and green beans.

- Cut potatoes evenly for even cooking.
- Check chicken’s internal temperature reaches 165°F (74°C).
