- 2 tbsp curry powder
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 can coconut milk
- 2 tbsp vegetable oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp turmeric
- 2 potatoes, diced
- 1 carrot, sliced
Instructions
- Heat oil in a large pot over medium heat.
- Add onions, garlic, and ginger. Sauté until fragrant.
- Add chicken pieces and cook until browned.
- Stir in curry powder, salt, pepper, and turmeric.
- Pour in coconut milk and bring to a simmer.
- Add potatoes and carrots. Cook until vegetables are tender.
- Serve hot with rice or bread.
Notes
- Adjust spice levels to taste.
- For extra flavor, marinate chicken in curry powder for 30 minutes before cooking.
