- 2 large flour tortillas
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup cooked chicken, diced (optional)
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1 tbsp butter or oil
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Heat a skillet over medium heat and add butter or oil.
- Place one tortilla in the skillet.
- Sprinkle half the cheese evenly over the tortilla.
- Add chicken, bell peppers, onions, salt, and black pepper.
- Sprinkle the remaining cheese on top.
- Place the second tortilla on top.
- Cook for 2-3 minutes until the bottom is golden brown.
- Flip carefully and cook the other side for 2-3 minutes.
- Remove from heat, cut into wedges, and serve.
