Ingredients

  • 2 large flour tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup cooked chicken, diced (optional)
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1 tbsp butter or oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Heat a skillet over medium heat and add butter or oil.
  2. Place one tortilla in the skillet.
  3. Sprinkle half the cheese evenly over the tortilla.
  4. Add chicken, bell peppers, onions, salt, and black pepper.
  5. Sprinkle the remaining cheese on top.
  6. Place the second tortilla on top.
  7. Cook for 2-3 minutes until the bottom is golden brown.
  8. Flip carefully and cook the other side for 2-3 minutes.
  9. Remove from heat, cut into wedges, and serve.
