Ingredients

- 1 lb fresh salmon, skin removed and finely chopped
- 1/2 cup breadcrumbs
- 1 egg, beaten
- 2 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 1/4 cup finely chopped onion
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil for frying
Instructions
- In a bowl, mix salmon, breadcrumbs, egg, mayonnaise, mustard, onion, lemon juice, salt, and pepper.
- Form the mixture into 4 equal-sized patties.
- Heat olive oil in a skillet over medium heat.
- Cook patties for 4-5 minutes per side until golden brown.
- Serve warm with your favorite sides.
