- 1 can black beans (15 oz), drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 bell pepper, diced
- 1 small red onion, finely chopped
- 2 jalapeños, seeded and diced
- 1/4 cup cilantro, chopped
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tbsp lime juice
- 1 tsp cumin
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- In a large bowl, combine black-eyed peas, black beans, corn, bell pepper, red onion, jalapeños, and cilantro.
- In a small bowl, whisk together olive oil, red wine vinegar, lime juice, cumin, salt, and black pepper.
- Pour the dressing over the bean mixture and toss gently to coat.
- Cover and refrigerate for at least 1 hour before serving to let flavors blend.
- Serve chilled with tortilla chips or as a side dish.
Notes
- For extra heat, keep the jalapeño seeds.
- Can be made a day ahead for better flavor.
