Ingredients
- Whole chicken: 1 (about 3-4 lbs), cut into pieces
- Buttermilk: 2 cups
- All-purpose flour: 2 cups
- Salt: 1 tablespoon
- Black pepper: 1 teaspoon
- Paprika: 1 tablespoon
- Garlic powder: 1 teaspoon
- Onion powder: 1 teaspoon
- Cayenne pepper: 1/2 teaspoon (adjust to taste)
- Baking powder: 1 teaspoon
- Oil for frying: enough to fill your frying pot (about 4-6 cups)
Instructions
- Marinate the chicken in a mixture of buttermilk, salt, black pepper, and cayenne pepper for at least four hours or overnight.
- Prepare the seasoned flour by whisking together all-purpose flour, paprika, garlic powder, onion powder, baking powder, and remaining salt, black pepper, and cayenne pepper.
- Dredge the marinated chicken in the seasoned flour, ensuring each piece is well coated.
- Heat oil in a deep frying pot to 350°F (175°C) and fry the chicken in batches for 12-15 minutes until golden brown and cooked through.
- Remove the chicken from the oil and let it drain on a wire rack or paper towels before serving.
Notes
- For best results, let the coated chicken rest for 15-20 minutes before frying.
- Maintain oil temperature at 350°F (175°C) for optimal frying.
