Ingredients

  • 1 cup chickpeas (soaked overnight)
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1/4 cup fresh parsley (chopped)
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp flour
  • 2 tbsp olive oil
  • 4 whole wheat tortillas
  • 1/2 cup hummus
  • 1/4 cup tahini dressing
  • 1 cup lettuce (shredded)
  • 1/2 cup tomatoes (diced)

Instructions

  1. Drain and rinse the soaked chickpeas.
  2. Blend chickpeas, onion, garlic, parsley, cumin, coriander, salt, and pepper in a food processor.
  3. Add flour and mix until the mixture holds together.
  4. Shape the mixture into small patties.
  5. Heat olive oil in a pan and cook falafel patties until golden brown on both sides.
  6. Warm the tortillas.
  7. Spread hummus on each tortilla.
  8. Place falafel patties, lettuce, and tomatoes on top.
  9. Drizzle with tahini dressing.
  10. Roll the tortillas tightly and serve.
