Ingredients

  • Feta cheese: 2 ounces, crumbled
  • Kosher salt: 2 teaspoons for the brine and 1 1/2 teaspoons for seasoning

  • Whole chicken: 3 1/2 to 4 pounds
  • Dried parsley: 1 tablespoon
  • Freshly ground black pepper: 1/2 teaspoon
  • Dried oregano: 1 1/2 teaspoons
  • Large lemons: 2
  • Olive oil: 2 tablespoons for seasoning and 4 tablespoons for roasting
  • Mixed baby greens: 5 ounces
  • Crumbled feta cheese: 2 ounces for garnish

Instructions

  1. Prepare the brine by combining feta cheese, kosher salt, and water in a large bowl.
  2. Brine the chicken by submerging it in the brine and refrigerating for at least 4 hours.
  3. Preheat the oven to 425°F (220°C).
  4. Remove the chicken from the brine and pat it dry with paper towels.
  5. Season the chicken with a mixture of kosher salt, black pepper, oregano, and parsley.
  6. Add halved lemons to the cavity of the chicken.
  7. Drizzle olive oil over the chicken.
  8. Roast the chicken in the preheated oven for about 1 hour and 15 minutes.
  9. Let the chicken rest for 10-15 minutes before carving.
  10. Serve the chicken garnished with crumbled feta cheese and mixed baby greens.
