Ingredients

- 🖤 Black Beans: 1 can (15 oz or 425 grams), drained and rinsed
- 🌽 Corn: 1 can (15 oz or 425 grams), drained
- 🍅 Diced Tomatoes: 1 can (15 oz or 425 grams), with juices
- 🌶️ Taco Seasoning: 1 packet (about 1 oz or 28 grams)
- 🫑 Bell Peppers: 1 cup, chopped (mixed colors)
- 🧅 Onion: 1 medium, diced
- 🧄 Garlic: 3 cloves, minced
- 🍋 Lime Juice: 2 tablespoons (freshly squeezed)
- 🧂 Salt and Pepper: to taste
- 🛢️ Olive Oil: 1 tablespoon (for sautéing)
Instructions
- Prepare the ingredients by washing and chopping the bell peppers, dicing the onion, and mincing the garlic.
- Turn on the Instant Pot and set it to the sauté function. Add olive oil and heat for a minute.
- Add diced onion and minced garlic to the pot and sauté for 2-3 minutes until translucent.
- Place the chicken breasts in the pot and sprinkle taco seasoning over them, stirring to coat.
- Add black beans, corn, diced tomatoes, and chopped bell peppers to the pot. Squeeze in lime juice and stir gently.
- Close the lid of the Instant Pot, set the valve to sealing, and select the manual or pressure cook setting for 10 minutes on high pressure.
- After cooking, let the Instant Pot naturally release pressure for 5 minutes, then switch to venting to release remaining pressure.
- Open the lid, shred the chicken in the pot, and mix with other ingredients. Adjust seasoning with salt and pepper if needed.
- Serve the Fiesta Chicken in bowls, garnished with fresh cilantro, avocado slices, or lime wedges if desired.
