  • 🫑 Bell Peppers: 1 cup, chopped (mixed colors)
  • 🧅 Onion: 1 medium, diced
  • 🧄 Garlic: 3 cloves, minced
  • 🍋 Lime Juice: 2 tablespoons (freshly squeezed)
  • 🧂 Salt and Pepper: to taste
  • 🛢️ Olive Oil: 1 tablespoon (for sautéing)

Instructions

  1. Prepare the ingredients by washing and chopping the bell peppers, dicing the onion, and mincing the garlic.
  2. Turn on the Instant Pot and set it to the sauté function. Add olive oil and heat for a minute.
  3. Add diced onion and minced garlic to the pot and sauté for 2-3 minutes until translucent.
  4. Place the chicken breasts in the pot and sprinkle taco seasoning over them, stirring to coat.
  5. Add black beans, corn, diced tomatoes, and chopped bell peppers to the pot. Squeeze in lime juice and stir gently.
  6. Close the lid of the Instant Pot, set the valve to sealing, and select the manual or pressure cook setting for 10 minutes on high pressure.
  7. After cooking, let the Instant Pot naturally release pressure for 5 minutes, then switch to venting to release remaining pressure.
  8. Open the lid, shred the chicken in the pot, and mix with other ingredients. Adjust seasoning with salt and pepper if needed.
  9. Serve the Fiesta Chicken in bowls, garnished with fresh cilantro, avocado slices, or lime wedges if desired.
