Ingredients

- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large oven-safe skillet over medium heat.
- Season chicken with salt, pepper, paprika, and thyme.
- Sear chicken for 3 minutes per side, then remove from skillet.
- Add onion and garlic to the skillet and cook for 2 minutes.
- Stir in rice, then pour in chicken broth.
- Place chicken on top of the rice mixture.
- Cover with a lid or foil and bake for 25 minutes.
- Let rest for 5 minutes before serving.
Notes
- For extra flavor, add a squeeze of lemon before serving.
- You can use chicken thighs instead of breasts if preferred.
- Add vegetables like bell peppers or peas for more color and nutrition.
