- Caster Sugar: 100 g (¾ cups)
- Demerara Sugar: 90 g (½ cups)
- Vanilla Extract: 1 teaspoon
- Chocolate Chips: 85 g (½ cups), dark or milk
Instructions
- Preheat your oven to 180°C (350°F) and line a 9×9 inch (23×23 cm) baking pan with parchment paper.
- In a medium bowl, whisk together the plain flour, cocoa powder, baking powder, and salt.
- Melt the chopped dark chocolate and butter together in a heatproof bowl over a double boiler or in the microwave.
- In a large mixing bowl, whisk together the eggs, caster sugar, demerara sugar, and vanilla extract until well combined and slightly frothy.
- Gradually add the dry mixture to the wet ingredients, folding gently until no flour streaks remain.
- Fold in the chocolate chips until evenly distributed.
- Pour the batter into the prepared baking pan and spread it evenly. Bake for 25-30 minutes.
- Let the brookies cool for about 10 minutes, then lift them out using the parchment paper and transfer to a wire rack to cool completely before cutting into squares.
