- 4 chicken thighs
- 4 tbsp butter
- 4 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 2 large potatoes, peeled and diced
- 1/2 cup milk
- 2 tbsp butter (for mashed potatoes)
Instructions
- Season chicken thighs with salt, pepper, and thyme.
- Melt butter in a pan over medium heat. Add minced garlic and cook for 1 minute.
- Add chicken thighs and cook for 6-7 minutes per side until golden brown and fully cooked.
- Boil potatoes until tender, then drain and mash with milk and butter.
- Serve chicken thighs with mashed potatoes.
Notes
- Use bone-in thighs for extra flavor.
- Adjust garlic to taste.
- Add parsley for garnish if desired.
