Ingredients
- Ribeye steak: 2 pieces, about 1 inch thick
- Garlic: 4 cloves, minced
- Unsalted butter: 4 tablespoons
- Fresh rosemary: 2 sprigs
- Salt: to taste
- Black pepper: to taste
- Potatoes: 4 medium-sized (Russet or Yukon Gold)
- Olive oil: 2 tablespoons
Instructions
- Remove the ribeye steaks from the fridge and let them sit at room temperature for about 30 minutes. Season both sides with salt and black pepper.
- In a small saucepan, melt the unsalted butter over low heat, then add minced garlic and fresh rosemary, cooking gently.
- Heat a cast iron skillet over medium-high heat until smoking hot. Place the seasoned steaks in the skillet and cook undisturbed for 4-5 minutes.
- Flip the steaks and add the garlic butter mixture to the skillet, basting the steaks with the melted butter.
- Soak the potatoes in cold water, then drain and pat dry. Toss with olive oil, salt, and pepper.
- Spread the fries on a baking sheet lined with parchment paper and bake in a preheated oven at 425°F (220°C) for 25-30 minutes, flipping halfway through.
- Once the ribeye is cooked to your liking, let it rest for 5 minutes before slicing. Plate the fries alongside the steak and drizzle with any remaining garlic butter.
