Instructions

  1. Remove the ribeye steaks from the fridge and let them sit at room temperature for about 30 minutes. Season both sides with salt and black pepper.
  2. In a small saucepan, melt the unsalted butter over low heat, then add minced garlic and fresh rosemary, cooking gently.
  3. Heat a cast iron skillet over medium-high heat until smoking hot. Place the seasoned steaks in the skillet and cook undisturbed for 4-5 minutes.
  4. Flip the steaks and add the garlic butter mixture to the skillet, basting the steaks with the melted butter.
  5. Soak the potatoes in cold water, then drain and pat dry. Toss with olive oil, salt, and pepper.
  6. Spread the fries on a baking sheet lined with parchment paper and bake in a preheated oven at 425°F (220°C) for 25-30 minutes, flipping halfway through.
  7. Once the ribeye is cooked to your liking, let it rest for 5 minutes before slicing. Plate the fries alongside the steak and drizzle with any remaining garlic butter.
