Ingredients

  • Steak tips: 1 lb (about 450 g)
  • Garlic: 4 cloves, minced
  • Butter: 4 tablespoons
  • Rigatoni pasta: 12 oz (about 340 g)
  • Heavy cream: 1 cup (about 240 ml)
  • Cheddar cheese: 1 cup, shredded
  • Parsley: 1/4 cup, chopped (for garnish)
  • Salt: to taste
  • Pepper: to taste

Instructions

  1. Pat the steak dry and season with salt and pepper. Let it sit for 10 minutes.
  2. Heat a skillet over medium-high heat and melt 2 tablespoons of butter. Sear the steak tips until browned, about 3-4 minutes per side. Remove and let rest.
  3. In a large pot, boil salted water and cook the rigatoni until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
  4. In the same skillet, melt the remaining butter and sauté the minced garlic until fragrant. Add heavy cream and stir to combine.
  5. Add shredded cheddar cheese to the skillet and stir until melted. If the sauce is too thick, add reserved pasta water to reach desired consistency.
  6. Toss the cooked rigatoni in the cheese sauce, then add the steak tips and mix gently.
  7. Plate the dish and garnish with chopped parsley before serving.
