Giant Lazy Meatballs are a hearty, comforting dish made with a mix of ground beef and pork, topped with melted cheese and fresh herbs, perfect for family dinners or gatherings.

Ingredients

  • Stale white bread: 4 large slices
  • Milk: 1/2 cup
  • Ground beef: 1 pound
  • Ground pork: 1 pound
  • Kosher salt: 2 1/2 teaspoons
  • Freshly ground black pepper: 1 teaspoon
  • Dried oregano: 1/4 teaspoon
  • Onion powder: 1 teaspoon
  • Garlic powder: 1 teaspoon
  • Cayenne pepper: 1 pinch
  • Olive oil: 1 tablespoon
  • Freshly grated Parmigiano-Reggiano cheese: 1/4 cup
  • Chopped fresh Italian parsley (optional): 1/3 cup
  • Large eggs: 2
  • Tomato sauce: 2 cups
  • Monterey Jack cheese: 2 ounces
  • Grated Parmigiano-Reggiano cheese: 1/4 cup
  • Chopped fresh Italian parsley: 1 tablespoon (for garnish)

Instructions

  1. Prepare the stale white bread by tearing it into small pieces and soaking it in milk for about 10 minutes.
  2. In a large mixing bowl, combine the ground beef, ground pork, soaked bread mixture, and spices. Mix gently.
  3. Add the eggs and cheese to the meat mixture and mix until just combined.
  4. Preheat the oven to 400°F (200°C) and shape the mixture into large meatballs.
  5. Bake the meatballs for 25-30 minutes until cooked through and golden brown.
  6. While the meatballs bake, heat the tomato sauce in a saucepan.
  7. Transfer the baked meatballs to the sauce and let them simmer for about 5 minutes.
  8. Add Monterey Jack cheese and additional Parmigiano-Reggiano cheese on top, cover, and cook for another 5 minutes.
  9. Serve the meatballs with sauce, garnished with parsley.

Notes

  • Use fresh ingredients for the best flavor.
  • Don’t overmix the meat mixture to keep meatballs tender.
  • Chill the mixture before shaping for better results.
  • Consider making a double batch to freeze for later.
