Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine gluten-free flour, baking powder, and salt.
- In a separate bowl, mix maple syrup, almond milk, melted coconut oil, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and gently fold them together.
- Carefully fold in the fresh blueberries.
- Scoop the batter into a muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 18-20 minutes.
- Let the muffins cool in the tin for 5 minutes before transferring to a wire rack.
