Description

A simple and flavorful Greek-style chicken dish cooked in a slow cooker with Mediterranean herbs and spices.


Ingredients

  • 4 boneless, skinless chicken fillets
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 red onion, sliced
  • 1 red bell pepper, sliced
  • 1/2 cup kalamata olives
  • 1/2 cup crumbled feta cheese

Instructions

  1. Place chicken fillets in the slow cooker.
  2. In a bowl, mix olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
  3. Pour the mixture over the chicken.
  4. Add sliced onion, bell pepper, and olives.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Top with feta cheese before serving.
