Description

Ingredients

  • 4 boneless, skinless chicken fillets
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup chicken broth
  • 1 red onion, sliced
  • 1 bell pepper, sliced
  • 1/2 cup kalamata olives

Instructions

  1. Place chicken fillets in the slow cooker.
  2. In a bowl, mix olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
  3. Pour the mixture over the chicken.
  4. Add chicken broth, red onion, bell pepper, and olives.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Shred or serve whole with your favorite sides.
