A simple and flavorful Greek chicken recipe made in the slow cooker. Tender chicken cooked with Mediterranean herbs and spices.
Ingredients

- 4 boneless, skinless chicken fillets
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup chicken broth
- 1 red onion, sliced
- 1 bell pepper, sliced
- 1/2 cup kalamata olives
Instructions
- Place chicken fillets in the slow cooker.
- In a bowl, mix olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
- Pour the mixture over the chicken.
- Add chicken broth, red onion, bell pepper, and olives.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred or serve whole with your favorite sides.
Notes
- For extra flavor, marinate the chicken for 1 hour before cooking.
- Serve with rice, pita bread, or a Greek salad.
- Leftovers can be stored in the fridge for up to 3 days.
