Description

A refreshing Greek pasta salad with crisp vegetables, tangy feta cheese, and a zesty dressing.


Ingredients

  • 8 oz pasta (penne or rotini)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine pasta, cherry tomatoes, cucumber, red onion, and olives.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour dressing over the salad and toss gently to coat.
  5. Sprinkle feta cheese on top before serving.

Notes

  • Chill for at least 1 hour for best flavor.
  • Add grilled chicken for extra protein.
