Description

A delightful fusion of Mediterranean and Mexican cuisines featuring juicy grilled chicken, fresh vegetables, and a refreshing mint yogurt sauce.

Ingredients

  • 🍗 Chicken breast – 500 grams (about 1 lb)
  • 🛢️ Olive oil – 2 tablespoons
  • 🧄 Garlic – 2 cloves, minced
  • 🌱 Cumin – 1 teaspoon
  • 🌶️ Paprika – 1 teaspoon
  • 🌮 Tortillas – 4 large (soft flour or corn)
  • 🥬 Lettuce – 1 cup, shredded
  • 🍅 Tomatoes – 1 cup, diced
  • 🧅 Red onion – 1/2 cup, thinly sliced
  • 🥣 Greek yogurt – 1 cup
  • 🌿 Fresh mint – 1/4 cup, chopped
  • 🍋 Lemon juice – 2 tablespoons
  • 🧂 Salt – to taste
  • 🧂 Pepper – to taste

Instructions

  1. Marinate the chicken by combining olive oil, minced garlic, cumin, paprika, salt, and pepper in a bowl. Add chicken breasts and coat well. Cover and refrigerate for at least 30 minutes.
  2. Prepare the mint yogurt sauce by mixing Greek yogurt, chopped fresh mint, lemon juice, and a pinch of salt in a separate bowl. Chill in the refrigerator.
  3. Preheat the grill or grill pan over medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side until cooked through (internal temperature of 75°C or 165°F). Let it rest for a few minutes.
  4. Warm the tortillas on the grill for about 30 seconds on each side. Slice the grilled chicken into strips.
  5. Assemble the tacos by layering shredded lettuce, diced tomatoes, sliced red onion, grilled chicken strips, and drizzling with mint yogurt sauce on each tortilla.

Notes

  • Letting the chicken marinate for longer enhances the flavor.
  • Use a meat thermometer to avoid overcooking the chicken.
  • Warming the tortillas prevents them from tearing.
  • Chill the mint yogurt sauce for a refreshing contrast.
