Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 tsp paprika
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup plain yogurt
  • 4 cloves garlic, minced
  • 1 tbsp tahini
  • 1 tbsp lemon juice
  • 2 cups cooked rice or quinoa
  • 1 cucumber, sliced
  • 1 tomato, diced
  • 1/2 red onion, thinly sliced
  • Fresh parsley for garnish

Instructions

  1. In a bowl, mix olive oil, lemon juice, paprika, cumin, turmeric, garlic powder, salt, and black pepper.
  2. Add chicken thighs and coat evenly. Marinate for at least 30 minutes.
  3. Preheat grill or grill pan over medium-high heat.
  4. Grill chicken for 6-7 minutes per side until fully cooked.
  5. Let chicken rest for 5 minutes, then slice thinly.
  6. For garlic sauce, mix yogurt, minced garlic, tahini, and lemon juice.
  7. Assemble bowls with rice or quinoa, grilled chicken, cucumber, tomato, and red onion.
  8. Drizzle with garlic sauce and garnish with parsley.
