- 4 medium-sized potatoes (about 2 lbs), peeled and cubed
- 4 tablespoons of butter
- 1/2 cup of milk (adjust for desired creaminess)
- 1 head of broccoli, cut into florets
Instructions
- Marinate the lamb chops by combining olive oil, minced garlic, chopped rosemary, salt, and pepper in a mixing bowl. Coat the lamb chops and let them marinate for at least 30 minutes.
- Prepare the mashed potatoes by boiling cubed potatoes in salted water until fork-tender. Drain, then mash with butter and milk until smooth. Season with salt and pepper.
- Cook the broccoli in boiling water for 3-4 minutes until tender-crisp, then drain.
- Grill the marinated lamb chops on a preheated grill for 4-5 minutes on each side for medium-rare. Let them rest before serving.
- Plate the dish by arranging mashed potatoes, grilled lamb chops, and broccoli, drizzling any remaining marinade over the lamb.
