Description

Grilled shrimp skewers marinated in a spicy garlic-lime sauce, served with fluffy couscous.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup couscous
  • 1 1/4 cups water or broth
  • 1 tbsp chopped fresh parsley

Instructions

  1. In a bowl, mix garlic, lime juice, olive oil, red pepper flakes, salt, and black pepper.
  2. Add shrimp to the marinade and toss to coat. Let sit for 15 minutes.
  3. Thread shrimp onto skewers.
  4. Grill skewers over medium heat for 2-3 minutes per side.
  5. Bring water or broth to a boil, then stir in couscous. Cover and let sit for 5 minutes.
  6. Fluff couscous with a fork and mix in parsley.
  7. Serve shrimp skewers over couscous.

Notes

  • Soak wooden skewers in water for 30 minutes to prevent burning.
  • Adjust red pepper flakes for more or less heat.
  • Use fresh lime juice for best flavor.
