Description
Grilled shrimp skewers marinated in a spicy garlic-lime sauce, served with fluffy couscous.
Ingredients

- 1 lb large shrimp, peeled and deveined
- 3 cloves garlic, minced
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1 tsp red pepper flakes
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup couscous
- 1 1/4 cups water or broth
- 1 tbsp chopped fresh parsley
Instructions
- In a bowl, mix garlic, lime juice, olive oil, red pepper flakes, salt, and black pepper.
- Add shrimp to the marinade and toss to coat. Let sit for 15 minutes.
- Thread shrimp onto skewers.
- Grill skewers over medium heat for 2-3 minutes per side.
- Bring water or broth to a boil, then stir in couscous. Cover and let sit for 5 minutes.
- Fluff couscous with a fork and mix in parsley.
- Serve shrimp skewers over couscous.
Notes
- Soak wooden skewers in water for 30 minutes to prevent burning.
- Adjust red pepper flakes for more or less heat.
- Use fresh lime juice for best flavor.
