Description

Ingredients

  • Ribeye steak: 2 pieces (about 1 lb each)
  • Lobster tails: 2 pieces (about 6-8 oz each)
  • Olive oil: 4 tablespoons (divided)
  • Garlic: 4 cloves, minced
  • Fresh rosemary: 2 sprigs, chopped
  • Baby potatoes: 1 lb, halved
  • Romaine lettuce: 1 head, chopped
  • Caesar dressing: 1/2 cup
  • Parmesan cheese: 1/2 cup, shaved
  • Croutons: 1 cup
  • Salt and pepper: to taste

Instructions

  1. Take the ribeye steaks out of the fridge 30 minutes before cooking to bring them to room temperature. Season generously with salt and pepper.
  2. Using kitchen scissors, cut down the top of the lobster shell and brush the meat with olive oil, seasoning with salt and pepper.
  3. If time allows, marinate the steak in a mixture of olive oil, minced garlic, and chopped rosemary for a couple of hours.
  4. Preheat the grill to medium-high heat for about 10-15 minutes.
  5. Grill the ribeye steaks for about 4-5 minutes on each side for medium-rare, using a meat thermometer to check for doneness.
  6. While the steak rests, grill the lobster tails meat side down for about 5-7 minutes until opaque and firm.
  7. Let the steak rest for a few minutes before slicing to retain juices.
