A delightful combination of grilled ribeye steak and succulent lobster tail, perfect for special occasions or a treat for loved ones.
Ingredients
- Ribeye steak: 2 pieces (about 1 lb each)
- Lobster tails: 2 pieces (about 6-8 oz each)
- Olive oil: 4 tablespoons (divided)
- Garlic: 4 cloves, minced
- Fresh rosemary: 2 sprigs, chopped
- Baby potatoes: 1 lb, halved
- Romaine lettuce: 1 head, chopped
- Caesar dressing: 1/2 cup
- Parmesan cheese: 1/2 cup, shaved
- Croutons: 1 cup
- Salt and pepper: to taste
Instructions
- Take the ribeye steaks out of the fridge 30 minutes before cooking to bring them to room temperature. Season generously with salt and pepper.
- Using kitchen scissors, cut down the top of the lobster shell and brush the meat with olive oil, seasoning with salt and pepper.
- If time allows, marinate the steak in a mixture of olive oil, minced garlic, and chopped rosemary for a couple of hours.
- Preheat the grill to medium-high heat for about 10-15 minutes.
- Grill the ribeye steaks for about 4-5 minutes on each side for medium-rare, using a meat thermometer to check for doneness.
- While the steak rests, grill the lobster tails meat side down for about 5-7 minutes until opaque and firm.
- Let the steak rest for a few minutes before slicing to retain juices.

- For a perfect medium-rare steak, aim for an internal temperature of about 130°F (54°C).
- Cooking times for lobster tails can vary; generally, cook for 1-2 minutes per ounce.
- Consider adding a squeeze of lemon juice to the lobster for extra flavor.
