Ingredients

- 2 bell peppers (red and yellow), sliced
- 1 zucchini, sliced
- 1 eggplant, sliced
- 1 red onion, sliced
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 2 cups mixed salad greens
- 1/4 cup fresh basil leaves
- 2 tbsp lemon juice
- 1 tbsp honey
- 1/4 cup olive oil (for dressing)
- 1 clove garlic, minced
Instructions
- Preheat the grill to medium-high heat.
- Toss the sliced vegetables with olive oil, salt, and black pepper.
- Grill the vegetables for 3-4 minutes per side until tender and slightly charred.
- Let the vegetables cool slightly.
- In a blender, combine basil leaves, lemon juice, honey, olive oil, and garlic to make the dressing.
- Arrange the salad greens on a plate and top with grilled vegetables.
- Drizzle the basil dressing over the salad.
- Serve immediately.
Notes
- You can substitute honey with maple syrup for a vegan option.
- Add crumbled feta or goat cheese for extra flavor.
- Store leftovers in an airtight container in the fridge for up to 2 days.
