Ingredients

- 2 cups fresh spinach, chopped
- 1 cup cooked ham, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/2 cup shredded cheddar cheese
- 4 large eggs
- 1/4 cup milk
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, toss spinach, ham, cherry tomatoes, red onion, and cheddar cheese.
- Whisk eggs, milk, salt, and pepper in a separate bowl.
- Heat olive oil in an oven-safe skillet over medium heat.
- Pour the egg mixture into the skillet and cook for 3-4 minutes until edges set.
- Transfer the skillet to the oven and bake for 12-15 minutes until fully cooked.
- Let cool slightly, slice and serve over the salad mixture.
Notes
- Use a non-stick skillet for easy flipping.
- Substitute turkey or bacon for ham if preferred.
- Add a pinch of nutmeg for extra flavor.
