A fresh and hearty salad combining the flavors of ham and spinach with a quiche-inspired twist.


Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup cooked ham, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup shredded cheddar cheese
  • 4 large eggs
  • 1/4 cup milk
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss spinach, ham, cherry tomatoes, red onion, and cheddar cheese.
  3. Whisk eggs, milk, salt, and pepper in a separate bowl.
  4. Heat olive oil in an oven-safe skillet over medium heat.
  5. Pour the egg mixture into the skillet and cook for 3-4 minutes until edges set.
  6. Transfer the skillet to the oven and bake for 12-15 minutes until fully cooked.
  7. Let cool slightly, slice and serve over the salad mixture.

Notes

  • Use a non-stick skillet for easy flipping.
  • Substitute turkey or bacon for ham if preferred.
  • Add a pinch of nutmeg for extra flavor.
