Description

A healthy, low-carb alternative to traditional wraps, buffalo chicken lettuce wraps are packed with flavor and easy to prepare. Crisp lettuce leaves cradle tender shredded chicken tossed in a spicy buffalo sauce.


Ingredients

  • 2 cups cooked shredded chicken
  • 1/4 cup buffalo sauce
  • 1 tbsp olive oil
  • 1/2 cup diced celery
  • 1/4 cup crumbled blue cheese (optional)
  • 8 large lettuce leaves (romaine or butter lettuce)
  • 1/4 cup shredded carrots
  • 1/4 cup diced red onion

Instructions

  1. In a bowl, mix shredded chicken with buffalo sauce.
  2. Heat olive oil in a pan over medium heat.
  3. Add chicken mixture and cook for 3-4 minutes until heated through.
  4. Wash and dry lettuce leaves.
  5. Spoon chicken mixture onto each lettuce leaf.
  6. Top with celery, carrots, red onion, and blue cheese if using.
  7. Serve immediately.
