Description

A comforting and nutritious healthy chicken stew that warms the soul with every bite.


Ingredients

  • ๐Ÿ— Chicken breast: 1 lb (about 450 g), cut into bite-sized pieces.
  • ๐Ÿฅ• Carrots: 2 medium, peeled and sliced.
  • ๐ŸŒฟ Celery: 2 stalks, chopped.
  • ๐Ÿฅ” Potatoes: 2 medium, peeled and diced.
  • ๐Ÿง… Onion: 1 medium, chopped.
  • ๐Ÿง„ Garlic: 3 cloves, minced.
  • ๐Ÿ— Chicken broth: 4 cups (about 1 liter).
  • ๐ŸŒฑ Thyme: 1 teaspoon, dried (or 1 tablespoon, fresh).
  • ๐Ÿƒ Bay leaves: 2.
  • ๐Ÿง‚ Salt and pepper: to taste.
  • ๐Ÿ›ข๏ธ Olive oil: 1 tablespoon (for sautรฉing).

Instructions

  1. Prepare all ingredients by cutting the chicken, peeling and slicing the carrots, dicing the potatoes, and chopping the onion and celery.
  2. Heat olive oil in a large pot over medium heat, then sautรฉ the chopped onion and minced garlic for 2-3 minutes.
  3. Add the chicken pieces to the pot, season with salt and pepper, and cook for 5-7 minutes until browned.
  4. Stir in the sliced carrots, chopped celery, and diced potatoes.
  5. Pour in the chicken broth, add thyme and bay leaves, bring to a boil, then reduce heat and let simmer for 25-30 minutes.
  6. Adjust seasoning if necessary, remove bay leaves, and serve hot.

  • Feel free to customize with your favorite vegetables or herbs.
