Ingredients
- ๐ Chicken breast: 1 lb (about 450 g), cut into bite-sized pieces.
- ๐ฅ Carrots: 2 medium, peeled and sliced.
- ๐ฟ Celery: 2 stalks, chopped.
- ๐ฅ Potatoes: 2 medium, peeled and diced.
- ๐ง Onion: 1 medium, chopped.
- ๐ง Garlic: 3 cloves, minced.
- ๐ Chicken broth: 4 cups (about 1 liter).
- ๐ฑ Thyme: 1 teaspoon, dried (or 1 tablespoon, fresh).
- ๐ Bay leaves: 2.
- ๐ง Salt and pepper: to taste.
- ๐ข๏ธ Olive oil: 1 tablespoon (for sautรฉing).
Instructions
- Prepare all ingredients by cutting the chicken, peeling and slicing the carrots, dicing the potatoes, and chopping the onion and celery.
- Heat olive oil in a large pot over medium heat, then sautรฉ the chopped onion and minced garlic for 2-3 minutes.
- Add the chicken pieces to the pot, season with salt and pepper, and cook for 5-7 minutes until browned.
- Stir in the sliced carrots, chopped celery, and diced potatoes.
- Pour in the chicken broth, add thyme and bay leaves, bring to a boil, then reduce heat and let simmer for 25-30 minutes.
- Adjust seasoning if necessary, remove bay leaves, and serve hot.
Notes
- Leftovers taste even better the next day.
- Feel free to customize with your favorite vegetables or herbs.
- Can be made in a slow cooker for convenience.
